Quinoa Black Bean Salad with Sizzled Chicken

Ingredients
1 boneless chicken breast
1 cup Quinoa
1 3/4 cups water
1/2 can black beans (drained & rinsed)
1 avocado
1/2 red onion sliced
Lettuce leaves
Sizzle sauce (baste on chicken and drizzle on finished salad)


Directions
Chicken:
Preheat oven to 400
Place boneless chicken breast in pan and baste with Sizzle Sauce
Bake for approx. 25 minutes (depending on weight)
Slice into bite sized pieces when finished
Quinoa:
Add 1 cup quinoa to 1 3/4 cup water
Bring to a boil-reduce heat and simmer for 15 minutes
Salad:
Place lettuce leaves on bottom of plate
Spoon quinoa on top of lettuce
Add black beans, sliced avocado, red onion and chicken
Drizzle a little more Sizzle sauce on top of salad
Toss and enjoy
